Yesterday Matt and I had the most unexpected day and it turned out to be exactly what we needed. We had planned to go to church with friends, have breakfast, then go home and get work done for the rest of the day. At breakfast with our friends we were convinced to attend their evening Christmas party with all of their friends and neighbors. At first we thought about all the work we had to get done, and almost came up with an excuse, but with a little push we agreed to go. That turned into spending the entire day at our friend’s house having the most relaxing day. It was one of those days where you feel so fulfilled by being around wonderful people and having amazing conversation. Where the energy just flows through conversation without being forced, and you can be present.
While cooking and baking for the party I had an itch to help. I can never just sit around and not contribute, so I offered to make a gluten-free and dairy-free dessert. We all wanted to go for a little walk anyways so we strolled over to Trader Joe’s. I’m not going to lie…I totally made this recipe up on the spot! I’ve made a few similar recipes, so I knew generally what I wanted to make, but I just planned on being inspired by what I saw at the grocery store. After picking up the base ingredients: almond butter and almonds, I saw dried dark cherries, and then it hit me- dark chocolate cherry cookie dough bites. I mean come on…those flavors…YUM.
We got back to the house, whipped them up, and finished getting ready for the party. The rest of the night was filled with meeting new people, lots of laughs, and having conversations that made my heart happy. The day was totally not what we anticipated but sometimes you just have to ditch the routine and go with the flow!
Soooo these dark chocolate cherry cookie dough bites are the BOMB.COM and the perfect healthy dessert to bring to a holiday party or just make for yourself to snack on (warning: they are highly addictive!).
DARK CHOCOLATE CHERRY COOKIE DOUGH BITES
1 cup of almonds
1 cup almond butter
6 pitted mejooled dates
1 tablespoon vanilla extract
1 cup dark chocolate chips
1/3 cup dried cherries
1 cup unsweetened coconut flakes
Directions: In a blender add the coconut flakes and pulse a few times to create a powder, remove the coconut from the blender and place in a bowl. In the same blender add the almonds and pulse a few times so they are broken up but not a powder. It’s okay if some are still whole. Add in the rest of the ingredients except the coconut flakes. Blend until thoroughly combined. You may have to stop multiple times, scraping and mixing around and blending again. If the consistency is too thick add a splash of water, coconut oil, or olive oil. When thoroughly blended, stop the blender and roll the dough into balls about the the size of a golf ball, then roll in the coconut flakes and place on a cookie sheet. Chill in the refrigerator until ready to serve. Enjoy!
